Its too hot!!

Made some Jambalaya the other night, tastes great but went a little heavy with the cayenne pepper. Does anyone know of a way to get some of the spicy hotness out?

The best kept secret to improve any food’s overly hot spiceness comes from an idea from Emeril Lagasse’s that I use. If you’re making a huge batch like I do, heat in microwave for one minute or on the stove, 1/4 cup of apple cider vinegar, once its hot, stir in two tablespoons of sugar (or honey) and dissolve. Add it to the food and its wonderful. If you get it a hair too sweet, add salt or just a dash of lemon juice. The mixture is called “gastrique” (gastreek), works wonder in any tomato based sauce.

Or try adding some non flavored yogurt or sour cream. Add a little at a time until it tastes right to you.
