JALAPENO GLAZED LAMB RIBS
4 American Lamb spareribs, trimmed
1 teaspoon salt
1/2 teaspoon pepper
10 ounces jalapeno jelly
2 tablespoons white wine vinegar with tarragon
2 tablespoons Dijon-style mustard
1 clove garlic, finely chopped
Place ribs on rack in roasting pan. Salt and pepper lamb ribs. Roast in 375ÂºF oven for 40 minutes.
In medium saucepan, combine jelly, vinegar, mustard and garlic. Simmer 5 minutes, stirring until smooth and jelly is melted.
Baste ribs with sauce and cook an additional 20 minutes, basting every 10 minutes
Cover and grill 4 inches over medium-hot coals for 30 to 45 minutes or until desired degree of doneness. Brush on glaze last 10 minutes of grilling.
