Makes 4 to 6 servings
1 12-ounce can jalapeno peppers
2 cups grated cheddar cheese (8 ounces)
3 eggs, beaten
Salt and pepper to taste
Preheat oven to 400 degrees. Seed and chop peppers. Place peppers and their juice in greased buttered 9-inch pie plate. Sprinkle cheese over peppers. Beat eggs with salt and pepper and pour over cheese. Bake 20 minutes. Cut into small slices and serve.
