Jalapenos stuffed with sausage

Hi all…
I’ve been a member for a while but this is my first posting. These are a big hit as an appetizer. I get requests to make these all the time.

JALAPENOS STUFFED WITH SAUSAGE
serves 16

1 pound of ground breakfast sausage - hot or regular (we like the hot)
1 package of cream cheese (8 ounce) - softened
1 cup of fresh grated parmesan cheese
1 1/2 pounds of jalapeno peppers (about 16 peppers)
Preheat oven to 425 degrees F (220 degrees C)

Cook sausage in a frying pan until no longer pink and totally cooked through. Drain grease. Blot dry with paper towel.

(Please wear rubber gloves while doing this next step!) Wash the jalapenos, cut them in half and remove the stem, seeds and white veins.

In a bowl, mix the sausage, the softened cream cheese, and Parmesan cheese.

Spoon about 1 to 1 ½ Tablespoons of the sausage mixture into each jalapeno half. Arrange stuffed halves on a baking sheet with sides.

Bake 20 minutes in the preheated oven, until bubbly and lightly browned.
