JAMAICAN BAKED CHICKEN (restaurant recipe)
2 jalapeno peppers, halved and seeded
Â½ onion, halved
2 cloves garlic. minced
1 1/4" thick slice fresh garlic
1 tbsp. olive oil
1 tbsp. white wine vinegar
1 tsp. jerk seasoning
1 tsp. ground allspice
1/4 tsp. salt
4 boneless, skinless chicken breast halves
Â½ mango, peeled and finely chopped
1 tbsp. chopped fresh cilantro
Preheat oven to 450F. Spray 13"X9" baking pan with vegetable spray. In a food processor, combine the first 9 ingredients and process until very finely chopped, scraping down the sides as needed.
Spread the jalapeno mixture on both sides of the chicken breasts and put them into the prepared baking pan. Bake for about 25 minutes until the internal temperature reaches 160F.
Place the chicken on plates and top with mango and garnish with cilantro.
