Jamaican Jerk Country Ribs with Tropical Fruit Salsa
4 lbs. Country style ribs
½ cups Roasted peanut oil (more for searing)
¼ cup Jamaican jerk seasoning
Salt and pepper
Tropical Fruit Salsa
1 ea. Pineapple, cut into small chunks
2 ea. Papayas diced
2 ea. Mangos, diced
¼ ea . Red onion, sliced thin
1 ea. Lemon, juiced
Salt and pepper to taste
Toss ribs with roasted peanut oil, jerk seasoning, and salt and pepper. Let stand for about 15 minutes. In a sauté pan heat a little more oil to medium high heat. Sear ribs on all sides until golden brown. Remove from pan, place in a baking pan and cover. Bake in a 325 degree oven for 20 minutes or until done. (Inside should be 145 degrees).
Tropical Fruit Salsa
Combine all ingredients. Keep in refrigerator until ready to use.
