John Wayne’s Cheese Casserole

2 4 oz. cans green chilies 2/3 c. evaporated milk
1 pound Monterey Jack cheese, grated 1 Tablespoon flour
1 pound Cheddar cheese, grated 1/2 teaspoon salt
finely chopped ham 2 medium tomatoes, sliced
4 eggs, separated pepper to taste

Combine grated cheeses, chilies, and ham. Turn into a well-greased or sprayed 9 x 13" casserole dish. Beat egg whites until stiff. Beat egg yolks, milk, flour, salt and pepper. Fold egg yolk mixture into beaten egg whites. Pour over cheese mixture, gently working in with a fork. Bake 30 minutes at 3250. Add sliced tomatoes, and bake another 20 minutes or until done. Cut into squares to serve.[/b]

I make mine like this but I use pablamo peppers that I roast under the broiler and put in cold water and peel the skin and take the seeds out. I add chopped tomatoes, onions and garlic I layer the peppers than sauce then more peppers then on top I take chorizo meat and make them into small little balls about the size between a marble and a pea and put this on top and cook…yum
