This is my most requested recipe. Hope you enjoy!
Heat oven to 350 degrees.
Place 2 sticks of butter in a 9x13 casserole pan and put in oven while you prepare the batter. In a large mixing bowl put 2 cups sugar, 1 1/2 cups flour, 3 Tbsp cocoa and 4 eggs (lightly beaten). Stir by hand (no mixers). Add the melted butter and 1 cup of pecans and stir to mix. Pour into the buttered pan and bake 25 minutes.
Prepare the icing to pour over the brownies when they come out of the oven.
ICING: Pease forgive me, I don’t measure this, but you won’t need to either. 2 cups (more or less) powdered sugar, 3 Tbsp. Cocoa, about 1 tsp. Vanilla, stir to mix and add milk. This is the tricky measuring part…start off with a couple Tbsp. of milk and gradually add enough to reach a consistency that is speadable, but not too thick. It will thicken a bit while you wait for the brownies to finish cooking. When you take them out of the oven, immediately spread the icing gently over the brownies. No need to wait to cool to enjoy.
