We had a family get together a couple of weeks ago and this is the recipe for the awesome cake that my cousin brought:
KELLY’S PUMPKIN PINEAPPLE WALNUT CAKE
1½ CUPS WALNUTS
3 CUPS FLOUR
½ CUP SUGAR
1 CUP FIRMLY PACKED BROWN SUGAR
2 TSP BAKING SODA
¾ TSP SALT
1 TBSP GROUND CINNAMON
½ TSP FIVE SPICE POWDER
1¼ CUPS VEGETABLE OIL
4 EGGS
1 TBSP VANILLA
1 1/3 CUPS PUMPKIN PUREE
¾ CUP CRUSHED PINEAPPLE, DRAINED
1½ CUPS SHREDDED COCONUT
PREHEAT OVEN TO 350F.
BUTTER A 9 X 13” PAN. LINE THE BOTTOM WITH PARCHMENT PAPER.
SPREAD WALNUTS IN A BAKING PAN & ROAST FOR 8 – 10 MINUTES. COOL & COARSELY CHOP. SET ASIDE.
IN A LARGE BOWL, STIR TOGETHER FLOUR, SUGAR, BROWN SUGAR, BAKING SODA, SALT, CINNAMON & FIVE SPICE POWDER.
ADD OIL, EGGS & VANILLA. BEAT WITH ELECTRIC MIXER ON MEDIUM SPEED UNTIL SMOOTH. ADD THE PUMPKIN & PINEAPPLE & MIX UNTIL INCORPORATED. FOLD IN WALNUTS & COCONUT.
SCRAPE THE BATTER INTO PREPARED PAN & SMOOTH THE TOP. BAKE UNITL TOOTHPICK INSERTED COMES OUT CLEAN, APPROX 65 MINUTES.
REMOVE FROM OVEN & LET COOL ON WIRE RACK.
ICE WITH A CREAM CHEESE ICING OR AN ICING SUGAR/MILK GLAZE.
MAKES 1 AWESOME CAKE.
