My cousin made this for a family get together. It was sooooo good.
Kelly’s Pumpkin Pineapple Walnut Cake
1½ cups walnuts
3 cups flour
½ cup sugar
1 cup firmly packed brown sugar
2 tsp baking soda
¾ tsp salt
1 tbsp ground cinnamon
½ tsp five spice powder
1¼ cups vegetable oil
4 eggs
1 tbsp vanilla
1 1/3 cups pumpkin puree
¾ cup crushed pineapple, drained
1½ cups shredded coconut
Preheat oven to 350f.
Butter a 9 x 13” pan. Line the bottom with parchment paper.
Spread walnuts in a baking pan & roast for 8 – 10 minutes. Cool & coarsely chop. Set aside.
In a large bowl, stir together flour, sugar, brown sugar, baking soda, salt, cinnamon & five spice powder.
Add oil, eggs & vanilla. Beat with electric mixer on medium speed until smooth. Add the pumpkin & pineapple & mix until incorporated. Fold in walnuts & coconut.
Scrape the batter into prepared pan & smooth the top. Bake unitl toothpick inserted comes out clean, approx 65 minutes.
Remove from oven & let cool on wire rack.
Ice with a cream cheese icing or an icing sugar/milk glaze.
Makes 1 awesome cake.
