King Ranch Chicken

This is the best King Ranch Chicken that I’ve ever had. To make it quicker, use a can of chicken broth and either canned chicken or a roasted chicken from the grocery.

Ingredients
1 Large Chicken
1 pkg flour tortillas (20 pk)
1 can cream of chicken soup
1 can cream of mushroom soup (I’ve substituted cr of celery)
1 jar jalapeno cheez whiz (or regular and add chopped jalapeno’s)
1 package grated cheddar cheese (at least 2 cups, I use about 3)
1 chopped onion
1 can rotel tomatoes

Directions
Boil chicken until tender, reserve broth.
Debone and set aside.
Over medium heat, in a large saucepan, mix both cans of soup, chopped onion, jar of jalapeno cheez whiz, half of the grated cheese and rotel tomatoes (drained) until all ingredients are blended.
Soak tortillas in chicken broth.
Spray 10 x 12 casserole with oil.
Layer bottom of 10 x 12 inch casserole dish with tortillas, completely covering and up sides.
Next put one layer of chunk chicken pieces.
Top with one layer of sauce.
Repeat each layer.
Top with remainder of grated cheese.
