It was nice and cool this morning - almost like a fall day so it was a good time to have the oven on - and this just came out of the oven. I came up with this recipe years ago and I’ve played with it till I got it to this:
Kitchen Witch’s Old-Fashioned Nut Loaf
In bowl, whisk:
3 c. unbleached flour
2 t. baking powder
1/2 t. salt - set aside
In separate bowl, cream until light and fluffy:
1 c. butter or margarine, softened
1 1/2 c. sugar
Add - one at a time - beating well after each addition:
4 large egss
Alternately add dry ingredients to creamed mixture with:
3/4 c. whole milk
Beat until smooth and add:
1 t. orange extract
1 t. almond extract
1 t. grated orange rind
1 c. finely chopped pecans
Pour into greased and floured 9 X 5-inch loaf pan.
Bake in preheated 375* F. oven for 45 - 50 minutes or until cake tests done.
Cool slightly before removing from pan.
NOTES: I have substituted 2 t. vanilla extract for the orange and almond flavoring and left out the orange rind; I have used lemon flavoring with lemon rind; I have used walnuts in place of pecans, etc.
