Ladyfingers

3 eggs, separated
1/2 cup sifted confectioners’ sugar
1/2 tsp vanilla
1/2 cup sifted cake flour
1/8 tsp salt

Beat egg whites until stiff but not dry. Beat in sugar gradually.

Beat egg yolks until thick, fold into egg whites, then fold in vanilla, flour and salt.

Shape into 4-1/2-inch fingers on baking sheet covered with heavy paper. Sprinkle with additional confectioners’ sugar and bake in moderate oven (350) for 10 to 12 minutes. Press together in pairs. Makes 12.
