Lamb Shanks, Sausages and Beans

  • 2 onion – chopped
  • 3 tablespoons butter
  • 1 pound small white beans – soaked overnight
  • drained
  • 3 lamb shanks
  • 4 carrots – sliced
  • salt and pepper – to taste
  • 1 bay leaf
  • 4 garlic sausages – sliced 1/2-inch thick

Place beans in bottom of crockpot and add remaining ingredients except sausages, with 1 1/2 quarts water. Cover and cook on high 2 hours, then on low 10 to 12 hours. Add sausages, cover and cook on high 30 minutes. Serves 4.
