Lassie’s Picnic Sandwich

3 large bell peppers: 1 red, 1 orange, 1 yellow
2 medium loaves crusty Italian bread
1 1/2 teaspoons Dijon mustard
1 tablespoon balsamic vinegar
1/4 cup extra-virgin olive oil
salt and freshly ground pepper
1/2 cup prepared black-olive paste
8 ounces fresh goat cheese
8 ounces marinated artichokes
6 ounces prosciutto, thinly sliced
1/4 pound peppered salami, thinly sliced
2 1/4 cups loosely packed mixed fresh herbs, such as basil, cilantro, and parsley

When you press this sandwich it mixes the flavors wonderfully.

Heat a grill and cook peppers for about 8-10 minutes until completely
charred. Turn peppers often so they are cooked evenly.

Remove from heat and place peppers to the side and let cool. Remove the
skins under cold water. Slice peppers in half, clean, and cut into one inch
strips. Combine mustard and vinegar in a bowl. Whisk in the olive oil, then
2 tablespoons warm water. Whisk in salt and pepper to taste, and set mixture aside.

Slice the loaves of bread lengthwise. Spread olive paste on the bottom
piece, and add the pepper strips. Crumble the goat cheese on top of peppers.
Arrange artichokes over goat cheese. Drizzle half of the reserved
vinaigrette on top. Arrange prosciutto and salami over artichokes. Drizzle
with the remaining vinaigrette. Scatter herbs over meats. Place the top
crust on sandwich. Wrap the bread tightly in plastic wrap or foil.

Place a weight such as a cast iron skillet or heavy book on top for an hour.
When ready to serve, slice sandwich into ten pieces. Sandwich can be made
one day ahead of time. If you do this, add vinaigrette about an hour before
serving.
