Layered Avocado Dip

Serves 8

Ingredients:

4 avocados, peeled, pitted and finely chopped
3 teaspoons lemon juice
2 cups sour cream
1 onion, finely chopped
8-ounce jar Pace picante sauce, medium heat
2 cups shredded Monterey Jack or Colby/Jack cheese

Sprinkle chopped avocados with lemon juice and spread in an oblong dish. Spread sour cream over avocados. Sprinkle chopped onion over sour cream. Add picante sauce. Top with shredded cheese. Chill and serve with tortilla chips.

Nutritional analysis per serving: 406 calories, 36 grams fat, 13 grams carbohydrates, 11 grams protein, 51 milligrams cholesterol, 431 milligrams sodium, 3 grams dietary fiber, 77 percent of calories from fat.
