Layered Fennel and Provolone
3 bulbs fennel, cleaned 8 slices cooked ham, cut into 1/2-inch [1.3-cm] strips 8 slices Provolone cheese, cut into strips Extra-virgin olive oil Parmesan cheese shavings, to garnish Preheat oven to 400°F [200°C]. Slice each fennel bulb lengthwise into 8 slices, starting at rounded sides of bulbs. Steam fennel slices for approximately 10 minutes, until tender. Lightly oil each slice of fennel. Arrange 8 large slices fennel onto a baking sheet. Top with ham strips, another slice of fennel, Provolone cheese strips and top with another slice of fennel. Brush with olive oil. Bake onto middle rack of preheated oven for approximately 20 minutes, to brown and soften the cheese. Serve onto warm serving plates, each serving sprinkled with a thread of olive oil and topped with Parmesan cheese shavings.
