I made this recipe up as I wanted to fine tune the one I had. It is very good and crunchy.
3/4 lbs. fresh Hearts of Romaine lettuce
1 medium cucumber, thinly sliced
1/2 cup broccoli florets cut into bite sized pieces
1/2 cup yellow cauliflower cut into bite sized pieces
1/2 cup radishes thinly sliced
1 medium sweet onion thinly sliced
2 hard cooked eggs sliced
1 cup Ranch - style salad dressing
about 6 bacon stripes cooked and crumbles
1 cup shredded mozzarella cheese
Tear Romaine lettuce into bite-sized pieces and arrange in a deep salad bowl. Evenly layer cucumbers, broccoli. cauilflower, radishes and onions and eggs. Spread dressing over the top, cover. Chill up to 24 hours. Just before serving sprinkle bacon and cheese on top of salad.
