Lemon Basil Chicken
1/2 cup olive oil
1/4 cup lemon juice
1 teaspoon grated lemon rind
2-3 cloves minced garlic
2 tablespoons white wine vinegar
1 tablespoon dried basil
1/4 teaspoon salt
1/2 teaspoon freshly ground pepper
4-6 boneless, skinless chicken breasts
Combine olive oil with next 7 ingredients. (Use blender for creamy
consistency). Arrange chicken in a shallow glass dish.
Pour marinade over chicken, turning once to coat.
Let marinate for at least one hour, the longer the better.
Grill, about 5 minutes on each side, depending on thickness of chicken.
