Lemon Cream Cheese Stuffed French Toast

Filling
8 oz softened cream cheese
1 lemon zested
1 tsp lemon juice
½ cup sugar
1 loaf French bread (1/2? slices)

Batter
2 ½ cups half & half
½ cup sugar
1/3 cup sugar
1 tsp vanilla extract
½ tsp ground nutmeg

In a small bowl, combine cream cheese with the lemon zest, lemon juice and sugar. Stir until well combined and there are no lumps.

On one side of the bread spread 1 heaping tablespoon of cream cheese filling to cover and then top with another slice (like a sandwich) until finished with the bread and filling.

For batter, whisk together the eggs, half & half, sugar, vanilla and nutmeg in a bowl. Preheat a lightly oiled griddle or a large skillet over medium heat.

Dip each sandwich in the batter, turning to coat well. Carefully remove the slice and let the excess batter drip off. Cook the bread on the heated griddle until nicely browned and crisp. 2-3 minutes per side.

Makes 8 servings.
