Lemon Pineapple Fluff Salad

2 small pack lemon sugar free jello
1 large can crushed pineapple
3/4 cup plain nonfat yogurt
3/4 cup dry milk powder
1 1/3 cups cool whip Lite

Pour jello into mixing bowl. Drain about 1/4 c. pineapple juice into jello, mix well. Add dry milk powder and yogurt; mix well. Pour in well-drained pineapple. Fold in cool whip.

This sounds really cool and refreshing, oh, and light as well! Do do you have any idea how long it would keep in the fridge? I would really like to try this, but I’m the only one here who would be eating it.

I have sometimes kept it in the fridge for 7 or 8 days.

O.K., I’m not trying to be an airhead here, but I picked up the ingredients to make this - all except the dry milk powder. It was $7.99 for a box and I just said “no way!” Can I substitute dry coffee creamer? I know the concept of the two products are similar, but don’t know if they are interchangeable in a recipe like this. Guess I’ll go for it and see what happens. :lol:

This recipe is a keeper! I don’t see why this couldn’t be put into a graham cracker crust and made as a pie. It would be gorgeous garnished with lemon slices and/or sprigs of mint!
