Lemon Sponge Cookies

These taste like little sponge cakes. This is a recipe originally from Arm & Hammer.

2 1/2 cup flour
1/4 teaspoon salt
1/2 level teaspoon baking soda
3/4 cup shortening
1 cup white granulated sugar
1 teaspoon vanilla
1/4 teaspoon lemon extract
1 egg
2 tablespoons milk

Preheat oven to 400. Need ungreased baking sheets.

Stir together the flour, salt and baking soda. Set aside.

Beat together the shortening and sugar. Add the vanilla, lemon, egg and milk. Blend in the dry ingredients. Drop by teaspoonfuls onto the baking sheets.

Bake for 10 - 12 minutes.
Makes 2 dozen
