Lemon Squares
Base:
1 Cup All-purpose Flour
½ Cup Butter
¼ Cup Sugar
Topping:
1 Cup Sugar
2 Tbsp All-purpose Flour
½ Tsp Baking Powder
¼ Tsp Salt
2 Eggs, Lightly Beaten
2 Tsp Grated Lemon Rind
3 Tbsp Lemon Juice
Icing Sugar
In Food Processor Or Mixing Bowl, Combine Flour, Butter & Sugar; Mix Well. Press Into Greased & Floured 8 Inch Square Baking Pan; Bake In 325°f Oven For 20 Minutes Or Until Golden.
In Food Processor Or Mixing Bowl Combine Sugar, Flour, Baking Powder, Salt, Eggs, Lemon Rind & Juice; Mix Well. Spread Over Base & Return To 325°f Oven For 20 – 25 Minutes Or Until Nearly Set. Let Cool In Pan. Dust With Icing Sugar.
Makes About 20 Small Squares.
