Lentil Chili
Bulgur wheat gives texture to this meatless chili.

Serving Size: 1 cup
Ingredients:
canola oil - 2 tbsp
medium onion, chopped - 1
garlic cloves, minced - 4
dried lentils - 1 cup
dry bulgur wheat - 1 cup
low-fat, low-sodium chicken broth or vegetable broth - 3 cups
canned tomatoes, drained and coarsely chopped - 2 cups
chili powder - 2 tbsp
cumin - 1 tbsp
- Heat the oil in a large stockpot over medium-high heat. Add the onions and garlic and saute for 5 minutes. Add the dry lentils and bulgur wheat and stir. Add all the remaining ingredients and bring to a boil. Simmer for 30 minutes until the lentils are tender.
