LIME CURED SALMON
Juice of 4 limes
1.5 oz. extra-virgin olive oil
2 sprigs fresh thyme
1 clove garlic, minced
Fresh salmon, thinly sliced
Mix lime juice, olive oil, thyme and garlic in a small glass
dish. Dust each slice of salmon with salt. Place in juice
mixture and set in refrigerator for four hours.
After four hours, turn fish over. Let marinate for another
four hours. Serve.
