Lone Star T-Bone Steaks with Lone Star Rub
Always tender and juicy!

• 2 teaspoons kosher salt
• 1½ teaspoons pure chile powder
• 1½ teaspoons granulated onion
• ¾ teaspoon granulated garlic
• ½ teaspoon paprika
• ½ teaspoon dried marjoram
• ¼ teaspoon ground cumin
• ¼ teaspoon freshly ground black pepper
• ⅛ teaspoon ground cinnamon
• 4 T-bone steaks, each 12 to 16 ounces and about 1 inch thick
• 2 tablespoons extra-virgin olive oil
• 2 limes, cut into wedges (optional)

  1. In a small bowl combine the rub ingredients. Lightly brush both sides of the steaks with the oil and season evenly with the rub, gently pressing the spices into the meat. Allow the steaks to stand at room temperature for 15 to 30 minutes before grilling.
  2. Prepare the grill for direct cooking over high heat (450° to 550°F).
  3. Brush the cooking grates clean. Grill the steaks over direct high heat, with the lid closed as much as possible, until cooked to your desired doneness, 6 to 8 minutes for medium rare, turning once or twice (if flare-ups occur, move the steaks temporarily over indirect heat). Remove from the grill and let rest for 3 to 5 minutes. Serve warm with lime wedges, if desired.

Coarse Salt- 1/2 Cup,
Ground Pepper-1/2 Cup,
Paprika- 1/4 Cup,
New Mexico Red Chili- 3 Table Spoons,
Cayenne Pepper- 2 Table Spoons,
Garlic Powder- 2 Table Spoons,
Ground Cumin- 1 Table Spoon,
Dried Oregano- 1 Table Spoon,
Dried Thyme- 1 Table Spoon

Mix all ingredients in a large bowl and rub into a meat of choice (chicken, fish, steak). Preferably T-Bone Steak or any large steak!
Makes 1 ¾ cups

Lone Star Steak House Steak Sauce

1/2 cup unsalted butter
2 tablespoons low-sodium Worcestershire sauce
3/4 teaspoon black pepper
2 drops Tabasco sauce
4 ounces lemon juice
1 clove garlic, minced
1/2 teaspoon dry mustard
broiler meat drippings, to taste (optional)

Thoroughly mix all ingredients together in a saucepan and heat until the butter is completely melted.

Fire up the grill and break out the steaks. Store refrigerated.

Lone Star Steakhouse Chili Cream Sauce

½ cup sour cream
¾ teaspoon chili powder
2 teaspoons lime juice
2 tablespoons hot ketchup
Salt, to taste

  1. In small bowl, combine all ingredients and mix until smooth.
  2. Refrigerate until ready to use.
