LOOKING FOR RECIPES FOR CHINESE CHILI DIPPING SAUCE.
IT’S SERVED WITH CHINESE FOOD. AND IF YOU REQUEST HOT SAUCE IT IS WHAT THEY GIVE YOU.

Hi Cares6! I hope this is what you’re looking for.

Sweet and Hot Sauce:

1 cup rice wine vinegar
½ cup water
½ cup sugar
¼ cup brown sugar
1 tbsp red chili flakes
1 tsp salt
1 tsp minced garlic

Combine all ingredients in a saucepan and cook over low heat for 2 minutes to dissolve the sugars. Remove to a bowl and cool.

Szechuan Peppery Hot Sauce

2 tbsps chopped scallion
1 tbsp sesame oil
1 tbsp sesame seeds
2 tbsps red wine vinegar
3 tbsps soy sauce
3 tbsps chicken stock
1 tsp ground Szechuan Peppercorns
2 tsps hot oil (recipe follows)

Mix all the ingredients together in a bowl.

Hot Chili Oil

Hot Chili Oil is easy to make and will keep well for several months in the refrigerator.

Makes approximately half cup:

1/2 cup corn oil
20 dried hot chili peppers
1/2 tsp. Szechuan peppercorns
1 tsp. paprika

Line a small, fine strainer with a paper towel and set it aside.

In a small, heavy saucepan heat the oil. When the oil is very hot, turn down the heat to very low and add the peppers. Cook, stirring, until peppers turn dark brown.

Add the peppercorns and paprika, and continue to cook just until mixed.

Pour the oil through the strainer into a bowl. Discard the solids.

Pour the oil into a small jar and cover with a lid. Store in the refrigerator.
