Three Cheese Spinach Dip
1 (14 ounce) can artichoke hearts, drained
1/3 cup grated Romano cheese
1/4 cup grated Parmesan cheese
1/2 teaspoon minced garlic
1 (10 ounce) package frozen chopped spinach, thawed and drained
1/3 cup heavy cream
1/2 cup sour cream
1 cup shredded mozzarella cheese
1 Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
2 Place artichokes, Romano cheese, Parmesan cheese and garlic in a blender or food processor. Pulse until chopped but not ground. Set aside.
3 In a medium bowl, mix together spinach, cream, sour cream and mozzarella cheese. Stir in artichoke mixture. Spoon into prepared baking dish.
4 Bake for 20 to 25 minutes, or until cheese is melted and bubbly.

THREE CHEESE NACHO DIP
1 c. (8 oz.) sour cream
1 pkg. (3 oz.) cream cheese, softened
1 can (16 oz.) refried beans
1/2 c. picante sauce
2 tsp. chili powder
1/2 tsp. cumin
4 oz. shredded Cheddar cheese
4 oz. shredded Monterey Jack Cheese
2 bags tortilla chips
Combine sour cream, cream cheese, beans, picante salsa, chili powder, cumin. Mix thoroughly by hand or with electric mixer or food processor. In an 8 inch square baking dish (glass for microwaving).
Spread half of bean mixture in (“Pam sprayed”) bottom. Top with half the cheese. Repeat, ending with cheese. Bake at 350 degrees for 20 minutes.
Microwave: Medium power - 5 minutes or until center warms and cheese is melted. Serve with tortilla chips. If you have leftovers, good on soft tacos and burritos
