I Know It’s Kinda Like Stuffing With Eggplant And Cheese In It.

Eggplant Casserole
A delicious casserole with eggplant, onion, green peppers, cheddar cheese, cracker crumbs and more.

1 lb. eggplant, peeled and cut into 1/2 inch cubes
1 small onion, grated
3 slices bread, crumbled
1/2 C. evaporated milk
1/2 C. chopped green pepper
1 C. shredded Cheddar cheese
3 TBS. butter or margarine, melted
1 egg, beaten
3/4 tsp. salt
1/4 tsp. pepper
1/4 C. cracker crumbs
Paprika

Cook eggplant and onion in boiling water to cover 5 minutes or until tender; drain. Add crumbled bread and next 7 ingredients - stir well. Pour into a greased 1 1/2 quart baking dish, top with cracker crumbs, and sprinkle with paprika.

Bake, uncovered, at 350 for 30 to 35 minutes or until lightly browned. Great alone or with a fish, chicken or beef entree.

Cheesy Fried Eggplant

4 to 6 servings

1/3 cup yellow cornmeal
1/3 cup all-purpose flour
3 tablespoons Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon garlic powder
1 egg , slightly beaten
1/2 cup milk
1 large eggplant (about 2 pounds), peeled and cut crosswise in 1/2 inch slices
1/4 cup CRISCO all-vegetable shortening or 1/4 CRISCO stick

Combine cornmeal, flour, cheese, salt and garlic powder on waxed paper.
Combine egg and milk in shallow dish or pie plate. Dip eggplant in mixture. Coat with cornmeal mixture.
Heat Crisco to 365ºF in electric skillet or on medium-high heat in large skillet. Fry, a few slices at a time, 1 or 2 minutes on each side or until golden brown. Turn once. Drain on paper towels. Sprinkle with additional Parmesan cheese, if desired. Serve immediately.

You’re very welcomed! I am an eggplant lover myself! Last week I made some eggplant fingers for a snack with marinara sauce for dipping. Just a no-brainer - breaded eggplant sticks (flavored some cracker crumbs after rolling eggplant sticks in egg white), pan fried in oil and dipped in - diced tomatoes heated up with a collection of spices - marjoram, garlic, parlsey, salt, pepper, chili powder, etc. - curled up with a blanket and a good movie! Satisfied my craving!
