Low Sodium Creamy Crab Soup

Here is a recipe I’ve made several times that is easy to do and tastes pretty good for anyone restricted to a low sodium diet.


  • 1/2 pound package of imitation crab meat (shredded)
  • One Quart of low sodium chicken broth
  • 2 tablespoons of cornstarch
  • 1/2 medium Onion (chopped)
  • Tablespoon of unsalted margarine
  • 1/8 tea spoon of dill weed
  • 1 cup 2% milk


Melt margarine in a large pot over moderate heat.
Add in the chopped onion and cook until soft.
Add in the shredded crab meat and cook for 3 minutes
while stirring. Add in the chicken broth and bring to
a boil then reduce heat to medium. In another bowl,
combine the 2% milk with 2 tablespoons of
cornstarch and stir until smooth. Add this into the
soup and bring it to a boil stirring constantly and
until the soup thickens. Reduce heat to medium
and stir in the dill weed.

The result will be a creamy crab soup taste which
can be enjoyed as is. It’s a very inexpensive soup
and the imitation crab does taste a lot like real

I sometimes will add a dash of garlic powder and I
have also added a dash of cayenne pepper if you
enjoy having a little extra hot taste.
