Luby’s Baked Cheesecake
Makes One 9" cheesecake
Crust:
1-1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/4 cup (1/2 stick) butter or margarine, melted
Filling:
1-1/4 pounds. (2-1/2 (8 oz). packages) cream cheese, softened
1 cup granulated sugar
3 extra-large eggs
1 cup sour cream
2 tablespoons. all-purpose flour
1/2 teaspoon. vanilla
1/2 teaspoon. fresh lemon juice
Fresh fruit (optional)

Heat oven to 350 degrees.

For crust, in small bowl, combine crumbs, sugar and margarine. Mix well.
Press onto bottom and 1 inch up sides of 9-inch springform pan. -
Bake 10 minutes or until golden brown. Cool completely

For filling, in large bowl, beat together cream cheese and sugar until
creamy. Add eggs, one at a time, mixing well after each addition. Add sour
cream, flour, vanilla, and lemon juice. Mix just until well blended. Do not
overmix. Pour into crust. -
Bake 30 to 35 minutes or until almost set. Cool completely on wire
cooling rack. Refrigerate at least 2 hours. Garnish with fruit, if desired.
Yield: 1 9 inch cheesecake
