Macadamia and Banana Crusted Chicken
4 (6 ounce each) boneless chicken breasts
4 cups ground macadamia nuts
4 cups ground banana chips (dried banana chips, get
them in a health food store or supermarket)
2 cups shredded coconut
2 cups flour
4 eggs, beaten
Salt and pepper to taste
2 cups olive oil for frying
Mix dry ingredients in a large bowl. Coat chicken breasts in flour,
then dip in egg, then coat on both sides with the dry mixture.
Fry in hot olive oil until browned on both sides.
Remove from oil and finish cooking in a 350F oven. Serve immediately.
