Macaroni Salad Deluxe

2 Cup uncooked macaroni
6 hard-cooked eggs, diced
1 Cup diced celery
1 green pepper, diced
1 small onion, diced
2 carrots, shredded
1 Cup cooked, drained peas

Cook macaroni as directed on package; drain and blanch under cold water.

1 c. mayonnaise
1/4 c. milk
1 Tbsp. vinegar
1 tsp. salt
1/4 tsp. pepper

Mix well. Add other ingredients.

You now have a tasty macaroni salad.

I made a slight variation to this recipe … I substituted non fat sour cream for the mayo.

4 cups macaroni, cooked (about 1 1/2 cups)
1 cup julienne ham
1/2 cup cubed American cheese
10-oz. pkg. frozen peas
4 hard-cooked eggs, sliced
1 cup celery, sliced
1/4 cup green onion tops, cut up
2/3 cup dairy sour cream
1/3 to 1/2 cup mayonnaise
1/3 cup sweet pickle relish
1 tsp. dill weed
Combine all of the above ingredients and chill thoroughly. Do not leave out the dill weed–adds a unique flavor.
