Macaroni with Corn Relish and Smoked Turkey
1 pound Rotini, Twists or Spirals – uncooked
1 10-ounce package frozen corn – thawed
2 stalks celery – diced
1 medium red onion – diced
12 ounces smoked turkey – diced
2 teaspoons vegetable oil
1/4 cup tomato sauce
1/4 cup barbecue sauce
1/4 cup low-sodium, defatted chicken broth
1/4 cup red wine vinegar
12 green olives – sliced
Cook pasta according to package directions. Drain and rinse pasta with cool water.
In a large bowl, stir together the corn, celery, red onion and turkey. In a medium bowl, whisk together remaining ingredients. Stir into corn mixture. Add pasta and toss well. Spoon into a serving bowl and sprinkle with olives.
