MAKE-AHEAD GIANT STUFFED GRILL BURGER
1 1/4 c. crushed herb-seasoned stuffing mix
1 can (4 oz.) chopped mushrooms, drained
1/3 c. beef broth
1/4 c. sliced green onions
1/4 c. minced fresh parsley (or 1 1/2 T. dried)
1 egg, beaten
2 T. butter or margarine, melted
1 t. lemon juice
2 lbs. ground beef
Salt and pepper to taste
Combine stuffing mix, mushrooms, broth, onions, parsley, egg, butter and lemon juice; mix well. Mix ground beef with seasonings. Pat into two 8-inch circles on waxed paper. Spread stuffing mixture over one circle to within 1-inch of edge; top with remaining circle; seal edge to enclose filling. Chill, covered, for several hours, if desired. MAKE AHEAD TO THIS POINT.
Place on greased rack over medium coals. Gril 10 to 12 minutes on each side. Cut into wedges.
Serves 6 to 8
NOTE: This can also be roasted in the oven at 350* F. until done.
