MAKE-AHEAD MANDARIN CHICKEN SALAD
3 c. chopped cooked chicken
1 c. chopped celery
2 T. lemon juice
1 T. minced onion
Salt to taste
1/3 c. mayonnaise
1 c. seedless green grapes
1 can (11 oz.) mandarin oranges, drained
1/2 c. toasted slivered almonds
Combine chicken, celery, lemon juice, onion and salt in bowl; mix gently. Chill, covered, for several hours if desired. MAKE AHEAD TO THIS POINT.
Add mayonnaise, grapes, oranges and almonds; toss lightly. Serve on lettuce-lined plates. Garnish with additional ornage slices.
