MAKE AHEAD MICROWAVE CHICKEN-LICHEN CHICKEN
One 2 lb. chicken, cut up
1/4 c. mayonnaise
1/2 c. Russian salad dressing
1 env. dry onion soup mix
1 c. apricot-pineapple preserves
Arrange chicken in 8 X 12-inch glass baking dish. Combine remaining ingredients in bowl; mix well. Spoon over chicken, coating each piece completely. Chill, covered, for several hours if desired. MAKE AHEAD TO THIS POINT.
Microwave loosely covered, on HIGH for 20 to 25 minutes or until tender, turning dish 3 times.
Serves 2 to 4
NOTE: The preserve mixture is also a tasty basting sauce for grilled chicken. Grill chicken until almost tender, then baste and turn frequently during the final 5 minutes of grilling.
