MAKE AHEAD VIDALIA ONION CASSEROLE
3 large Vidalia onions, sliced into rings
6 T. margarine
8 to 10 saltine crackers, crushed
1 c. grated sharp cheese
3 T. evaporated milk
Saute onions in margarine in skillet. Layer half the cracker crumbs, all the onions and cheese in greased 8-inch square baking dish. Drizzle evaporated milk over layers. Top with remaining crumbs. Chill for several hours, if desired. MAKE AHEAD TO THIS POINT.
Bake in preheated 350* F. oven for 20 minutes.
