Mango Pudding

Serves 8

3 large mangoes
2 envelopes unflavored gelatin
1 cup hot water
3/4 cup sugar
1 cup evaporated milk
4 ice cubes
fresh mango slices, raspberries, or kiwi slices for garnish, optional

  1. Peel the mangoes and slice the flesh of the mango from the pit. Put the slices into a blender and puree.

  2. In a large glass bowl, add gelatin to hot water and mix until dissolved and smooth. Let the gelatin mixture stand for about 3 minutes. Add the evaporated milk and the sugar and mix until the sugar is completely dissolved. Add the ice cubes to cool down the mixture and stir until the ice cubes are dissolved.
