Mango Salsa

Mango Salsa

2 mangoes, finely diced

1 medium red onion, finely diced
1 cucumber, peeled, seeded and finely diced
2 jalapeno peppers, minced (optional)
1/4 cup cilantro leaves, chopped
1/2 Tbs. ancho chile powder (optional)
2 large limes, juiced
2 Tbs. olive oil
salt and pepper to taste

Directions: Combine all ingredients in a medium bowl and stir well. Keep refrigerated until ready to use

It looks simple and sounds delicious.
