Marilyn’s Meatloaf

Preheat oven to 375°F.

2 pounds lean ground beef or ground chuck
2 - small cans of tomato paste
1 (12-oz.) can tomato sauce
1 cup minute rice or 1 cup oatmeal (which ever you choose add it uncooked)
1-2 cups chopped peeled onion (depending on how much you like onion)
2 eggs
2 TBS dry celery flakes
1 Lg jar/can mushrooms (bits and pieces are fine)
Salt/pepper to taste

In a large bowl, mix ground beef, tomato paste, onion, eggs, celery, salt and pepper. oatmeal or minute rice uncooked and mushrooms. Shape into a loaf and place in a foil lined 9 x 5 x 3-inch baking pan.

Bake for 1-1 1/2 hours or until done. Then pour tomato sauce over entire top and sides of meatloaf and place back in oven and cook until tomato sauce starts to look thick.

Leftovers make great cold sandwiches.
