Marinated Chicken - Haitian Style

-4 (6oz.) chicken breast
-1 TBSP. vegetable oil
-1 c. lime juice
-1 c. dark rum
-2 tsp. salt
-2 TBSP. brown sugar
-1 tsp. coriander - ground
-1 tsp. black pepper - ground
-1 tsp. allspice

  1. Mix oil, lime juice, rum, salt sugar, and spices in a large mixing bowl. Whisk with wire whip to blend completely.
  2. Add breast to marinade and place in refrigerator for one hour.
  3. Remove breast from marinade and shake off excess juices.
  4. Grill over barbecue coals or under broiler oven until done.
