Marshmallow Graham Cookie

Marshmallow Graham Cookie
1 box graham crackers
2 c. mini-marshmallows
1/2 c. butter
3/4 c. brown sugar
1 tsp. cinnamon
1 tsp. vanilla
3/4 c. coconut
3/4 c. chopped nuts

Preheat oven to 350°. Line cookie sheet with foil. Cover with whole graham crackers. Pour marshmallows over graham crackers. In a saucepan melt butter; mix in brown sugar and cinnamon. Remove from heat and add the vanilla. Spoon over marshmallows. Sprinkle with coconut and nuts on top. Bake for 15 minutes. Cool and break into parts. Store in a air tight container.
