Mary Moore’s Raisin Orange Bread

Yeast bread - tube or bundt pan

1 pkg granular yeast (1 Tablespoon)
1/2 cup lukewarm water
1 teaspoon granulated sugar (first amount)
1/2 cup milk
1/3 cup butter
1/4 cup granlated sugar (second amount)
1 teaspoon salt
rind and juice from 1 extra large orange (approx. 2 Tablespoons rind and 2 or 3

Tablespoons juice)
1 1/2 cups raisins (preferably bleached)
1 egg
3 to 3 1/2 cups all-purpose flour, unsifted (divided - see below)

In a one-cup measure dissolve the one teaspoon sugar in the lukewarm water.
Sprinkle over yeast and let stand 10-minutes. Stir once.

Meanwhile heat and stir milk, butter, sugar and salt in a small pan until warm to the touch and butter melts and sugar and salt are dissolved.

Pour into a large bowl. Stir in yeast liquid, orange rind and juice, raisins, egg and 2 cups of the flour. Blend then beat until smooth and elastic – about 50

strokes. Add one cup more flour and work into dough.

Turn out on a lightly floured board and knead until smooth and elastic – 250 times.

If dough becomes sticky, sprinkle over some of the remaining half cup flour and knead in. (I - [Mary Moore] used 3 1/4 cups flour in all.)

Place dough in large greased bowl and rotate to grease all surfaces. Cover and let rise in warm place until doubled – about 1 1/2 hours.

Punch down dough and turn out on lightly floured board and knead 100 times.
Return to bowl, cover and let rest 10 minutes. Shape dough into a 19-inch roll which is just long enough to surround center tube of a greased 12-cup bundt or tube pan. Press ends snugly together.

Note: You may use your tube pan with removable center if necessary. Let rise
uncovered, until doubled – about one hour.

Bake at 350 degrees F for 35 to 40 minutes or until when bread is tapped it sounds hollow.

Remove from oven and immediately brush surface with melted butter.

Let stand in pan no longer than 3 minutes then remove from pan and cool on cake rack.
