1 5-lb. bag flour
2/3 c. baking powder
1 T. salt
1/4 to 1/3 c. sugar
2 2/3 c. instant nonfat dry milk powder
2 1/2 c. shortening
Sift dry ingredients together into large bowl. Cut in shortening until crumbly. Store mixture in airtight container.
May be used in biscuits, pancakes, waffles or pizza crust.
MASTER MIX BISCUITS
Combine 1/3 c. water and 1 c. Master Mix in bowl; mix well. Knead several times on lightly floured surface. Roll 1-inch thick; cut with biscuit cutter. Place on baking sheet. Bake in preheated 425* F. for 10 to 12 minutes or until golden brown.
MASTER MIX PANCAKES OR WAFFLES
Combine 1 c. Master Mix, 1 beaten egg, 2 T. melted shortening and 2/3 to 3/4 c. milk in bowl; mix well. Pour desired amount batter onto lightly greased griddle. Bake until brown on both sides.
MASTER MIX PIZZA CRUST
Dissolve 1 env. yeast in 1/2 c. warm water in bowl. Add 1 1/2 c. Master Mix; mix well. Press into 12-inch pizza pan. Bake in preheated 375* F. for 10 minutes. Top with sauce, toppings and cheese as desired. Return to oven and bake until crust is golden and cheese melts.
