Master Pilaf

Ingredients Preparation

1 tablespoon [15 g] butter
2 tablespoons [30 mL] oil
1 onion, chopped
1 cup [250 mL] grains [your choice - see below]
Stock

Special Touch

1/4 pound [113 g] cleaned fresh mushroom slices
1/4 cup [60 mL] raisins
1/2 cup [125 mL] thawed frozen peas
1 peeled carrot, diced
Canadian bacon cut into 1/4-inch [6-mm] dices, to taste
1 1/2 teaspoon [7.5 mL] marjoram, thyme or rosemary



If you want to add an ingredient of the special touch, check to see when to add it.
Into a casserole, heat together butter and oil, over medium heat.
Add chopped onion; stir-fry for 5 minutes.
Mix in grains; stir-fry for 1 minute.
Pour in stock, cover and lower heat to low.
Leave to simmer until tender.

Special Touch

Stir-fry mushroom slices along with chopped onion for 3 to 4 minutes before adding grains.
Mix in raisins 5 minutes before the end of cooking time.
Mix in thawed green peas 5 minutes before the end of cooking time.
Stir-fry carrot dices along with chopped onion, 2 to 3 minutes before adding grains.
Mix in Canadian bacon dices 10 minutes before the end of cooking time.
Stir in marjoram, thyme or rosemary, before adding grains.

One 1 cup [250 mL] of any of these grains

Barley [Pearl] 3 cups [750 mL] 1 hour
Barley [Whole] 3 cups [750 mL] 1:15 hours
Buckwheat [Kosha] 2 cups [500 mL] 12 to 15 minutes
Bulgur 2 cups [500 mL] 25 to 30 minutes
Millet 2 1/2 cups
[750 mL] 45 minutes
Quinoa 2 cups [500 mL] 30 to 35 minutes

ex: 1 c. pearl barley, 3 c. liquid, cook 1 hour
