Meat and Spinach Filling for Shells

2 lbs. ground chuck
1/2 medium onion, chopped fine
1 package frozen chopped spinach (cooked/drained)
1 cup bread crumbs
1/2 tsp. sage
2 tsp. salt
1 lb. large shells
2 stalks celery, chopped fine
2 Tbsp. parsley, chopped
1 garlic clove, crushed
3/4 cup Romano cheese
4 eggs, well beaten
1/2 tsp. basil
3/4 tsp. pepper
0 extra virgin olive oil for frying
0 favorite Tomato Sauce

Put a little olive oil in frying pan and saute celery, onion and garlic. Add meat, cook until meat is brown, add spinach; stir for several minutes, turn off heat, add remaining ingredients and mix well. Cook shells al dente, drain and fill. Arrange filled shells in a layer of sauce in a baking dish. Bake 350 degrees for 15 minutes.
