Meat Loaf

1 1/2 pounds [680 g] lean ground beef
2/3 cup [160 mL] dry breadcrumbs
1 cup [250 mL] onion barbecue sauce, divided
1 egg, beaten
1 [8-ounce / 227-g] pack long grain and wild rice stuffing mix
1 [10-ounce / 284-g] pack frozen chopped spinach, thawed and well drained
1 large peeled carrot, shredded



Preheat oven to 350°F [180°C].
Combine ground beef, breadcrumbs, half of onion barbecue sauce and beaten egg.
Roll out mixture, between 2 sheets of waxed paper, into a 15 x 10-inch [37.5 x 25-cm] rectangle.
Prepare stuffing mix according to package directions; mix in drained spinach and shredded carrot.
Spread stuffing over meat mixture.
Roll-up, starting at 10-inch [25-cm] side.
Thighly wrap in plastic wrap; refrigerate for several hours or overnight.
Unwrap, transfer onto a baking sheet and bake into a preheated oven for 1 hour.
Brush meat loaf with remaining half of onion barbecue sauce.
Bake for 15 minutes more, until glazed.
