meatless Friday.........

Tomorrow is Friday!

With all the cooking I did today in this heat - tomorrow is panini!

French bread split lengthwise, sprinkled with olive oil, red wine vinegar, Italian seasoning, basil, salt, pepper and garlic (make the vinaigrette in a bowl and slather on the bread), layer provolone, mozzarella, sun-dried tomatoes (in oil - drained), red bell peppers, drained marinated artichokes, onions and ANCHOVIES!

Grill in good ol’ George Forman.

Green beans with chunked mozzarella tossed with dressing (same as used on panini) with grape tomatoes.

Bread and butter pickles, sweet midges, pickled cauliflower, kosher dills and pepperoncini.

For lunch tomorrow - Westerns! Toasted white bread filled with western omelet (eggs, green and red bell peppers, chopped onions - NO MEAT) topped with pimiento cheese.
