mexican cheesy egg cassarole

3-4 roasted, peeled and seeded pablamo peppers
1 13 oz. evaporated milk
2 cloves crushed garlic
2 small tomatoes chopped
1 small onion chopped
1/2 cup each-chauaua (mexican cheese), sharp cheddar, monteray jack shredded
1/2 cup chorizo
4 eggs
for more kick you can add 1 jalapeno pepper finely chopped

Butter cassarole dish
in a mixing bowl beat eggs to this add all ingrediants except chorizo and peppers. Place a layerll of peppers into buttered cassarole dish and add 1/2 of the mixture then layer with the rest of peppers and pour the rest of mixture on top. Form the chorizo into small balls and place randomly on top of cassarole. Bake at 350 until top is brown and cassarole is set. enjoy!!
